Microwave Ovens and the Magnetron

A microwave oven is a kitchen appliance that heats and cooks food by exposing it to microwaves, a form of electromagnetic radiation. Unlike a conventional oven, which warms food from the outside by surrounding it with hot air, a microwave oven causes heat to be generated within the food itself. This makes it a fast and energy-efficient way to reheat and cook many foods, and its operation is a practical demonstration of how electromagnetic waves interact with matter.

The microwaves are produced by a device called the magnetron, a type of vacuum tube. Inside it, electrons emitted from a heated cathode are made to spiral past resonant cavities by the combined action of an electric field and a magnetic field, generating oscillating electromagnetic energy. This energy is channelled into the oven cavity, where the microwaves bounce off the metal walls and pass through the food. The cavity is enclosed by a metal mesh and shielding that keep the microwaves contained.

Microwaves heat food mainly through their effect on water molecules. A water molecule is electrically polar, with a positive and a negative end, so it tries to align with the rapidly alternating electric field of the microwaves. As the field reverses billions of times each second, the molecules rotate back and forth, and friction between them turns this motion into heat. This process, called dielectric heating, raises the temperature of the food from within wherever water is present.
