Food Chemistry

Food chemistry is the study of the chemical composition of food and the reactions that food undergoes during growth, processing, cooking, and storage. Foods are built from the major classes of biological molecules, including carbohydrates, proteins, and fats, along with water, vitamins, and minerals. Understanding how these substances behave explains the nutritional value of food, the changes that occur when it is prepared, and the processes that cause it to spoil.

Among the most important chemical changes in food are oxidation and reduction reactions, in which electrons are transferred between substances. Oxidation, the loss of electrons, is responsible for many familiar changes, such as the browning of cut fruit exposed to air and the development of off-flavours when fats turn rancid. Tracking these reactions involves concepts such as oxidation states, the bookkeeping numbers assigned to atoms to follow how electrons shift during a reaction, which help chemists balance equations and classify the types of reaction taking place.

Other chemical principles also underlie food science.
